Picture yourself harvesting oysters you grew yourself, sharing them with friends and family. Sound dreamy? It’s a reality for more than 100 New York families that, come July, will be shucking their very own shellfish. The participating families get access to grow bags, 1,000 baby oysters, called spat, and 100 fully grown oysters, plus space to farm on a public plot, all courtesy of South Fork Sea Farmers.

The director of East Hampton Town’s Aquaculture Department updated the town board as to its activities and future plans on Tuesday, and two East Hampton High School students provided an update on a South Fork Sea Farmers’ pilot project, a recently constructed oyster reef in Accabonac Harbor.

“Oysters do a fantastic job of filtering our water,” Bob Tymann of South Fork Sea Farmers explained to the Sag Harbor Village Board last week while displaying a slide showing algae, nitrogen, and other contaminants entering an oyster and coming out clean. The bivalves are like mini wastewater treatment plants, each adult filters 50 gallons a day.
